The Look of Pure Satisfaction!


This little girl loves her some gluten-free chicken fingers with rosemary parsnip fries (stay tuned for the fries recipe!) You will quickly discover my obsession with Trader Joe's, as many of the ingredients I use for cooking, come from there! Prepare ye...these chicken fingers will be gobbled up by anyone within reach! Dave refers to Chick-fil-A chicken nuggets as "heroine nuggets". He assumes that since they are so goooood, there must be heroine in them! Ha. I can't disagree. Buuuuutttt, I realize this is awfully bold...we both think these are EVEN BETTER (and they're heroine-free!)


Gluten-Free Chicken Fingers Recipe:


Ingredients:
1 lb chicken strips
1 C almond meal (we prefer Trader Joe's brand)
1/2 tsp sea salt
1/2 tsp ground pepper
1 tsp Herbs de Provence
2 eggs
2 tsp water
3-4 T olive oil (or coconut oil, for an even healthier version)

Directions:
In a medium bowl, mix almond flour and seasonings together. In a separate bowl, whisk the eggs with 2 tsp water. Dip each chicken strip into the egg, then coat in the almond flour-herb mixture. Heat the olive oil in a large skillet over medium-high heat. Sauté the chicken in the oil for 3 to 6 minutes per side until golden-brown and cooked through. Transfer the chicken to a plate and serve hot with organic ketchup (yay for Trader Joe's!) Serves 4.
